Apple Torte (David and Diane)

Ingredients
4 T. soft butter
1 cup sugar
1 egg
1 cup flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp.salt
3 apples peeled, cored, and cut into thin slices
Vanilla ice cream

Directions
In a large mixing bowl cream together butter and sugar. Add egg and beat until light and fluffy. Sift together the dry ingredients and beat into the butter, sugar, egg mixture. With a rubber spatula or wooden spoon, gently stir apple slices into the batter. Turn into a buttered 9 inch pie pan and bake in a 350 degree oven for about 40 minutes. (It is a good idea to start checking the cake at about 35 minutes and continue baking until the cake is firm, and the apples are tender). Cool slightly. Cut into wedges while warm and serve with ice cream.
