Maple Smash - Cocktail (from my neighbor Ben)

Ingredients

Whiskey
Maple Syrup
Fresh squeezed Lemon Juice

Directions

In a drink mixer combine (quantities are per person)
5 -8 cubes of ice
2 shots whiskey
1 shot maple syrup - the darker the better
1 shot lemon juice

cover mixer and shake vigorously for at least 20 seconds

pour contents into tumbler, then open mixer and pluck out 2-3 ice cubes and place into tumbler without splashing

Addictive and potent
have this at home when you don't need to go out

Spicy Nuts (Diana and Hanne)

Ingredients
1 cup brown sugar (every time I use less)
1/4 c water- this helps to make the syrup
1 stick butter
2 tsp garlic
3 Tbs curry powder(I use Jamaican Curry powder)
2 tsp salt
11/2-2 lbs unsalted whole nuts (I use walnuts, pecans, cashews)

Instructions
Melt the butter, add sugar and water in microwaveable bowl. Cook in the microwave until it becomes a thick syrup. Add other ingredients. Place on a cookie sheet at 350 degrees for about 15 min.-1/2 hours , stir every 10 minutes

Mango Salsa (Betsy and Paul)

Ingredients
1 red onion, chopped
¼ fresh lime juice
1 mango
1 red bell pepper, chopped
1 clove garlic, minced
¼ cup fresh orange juice
1 jalapeno
Salt and pepper
Opt. 1/3 cup black beans

Instructions
Combine ingredients and enjoy!

Comments
Make extra – it goes quickly! I’ve also made this with strawberries.

Guacamole with roasted corn (David and Diane)

Ingredients:
1 cup fresh or frozen corn
4 Tbs minced red onion
1/2 tsp ground cumin
1 tsp minced fresh chilis, or 1 Tbs canned diced green chili or 1 1/2 tsp chili sauce
2 garlic cloves, pressed or minced
2 tsp vegtable oil
1 avocado , halved, pitted, peeled and cubed
1 tomato, chopped (or crushed tomato from a can)
3 Tbs lime juice (fresh if possible)
2 t cider vinegar
salt and pepper to taste

Directions:

Pre-heat the broiler. In a bowl, mix together the corn, red onions, cumin, chili, garlic, and oil.

Spread the mixture onto a baking pan and roast about 3 inches from the flame or element for about 10 minutes - stirring often at least three times or more.

When the corn is tender and golden brown, remove the pan from the oven and set aside to cool.

Combine the avocado, tomato, lime juice, and vinegar in a serving bowl. Stir in the roasted corn mixture and add salt and pepper to taste.

Serve immediately or chill and serve later.

GREAT Hot Artichoke Dip (David and Diane)

Ingredients:
1 can artichoke hearts in water (not oil)
1 small can diced green chilis
1/3 cup grated parmesean cheese
1/3 cup mayonnaise


Directions:

Mix up all ingredients in the Cuisinart machine with blade.
Put into glass baking pan, cook @ 350 for 30 minutes covered

Serve hot with corn chips or sliced baguettes.

Comments:

This is by far our FAVORITE dip. We take it to all the pot luck events and have been known to make up and eat a whole batch on rainy afternoons in front a good movie...
