10 chicken pieces
1 lemon rind grated
2 Tbsp fresh thyme
2 lbs small potatoes
1 lemon, thinly sliced
12 large garlic cloves, unpeeled
¼ cup olive oil
Season chicken with salt, and pepper. Toss with lemon rind and thyme. Place in baking dish. Add potatoes, lemon pieces and garlic cloves. Drizzle with olive oil. Bake at 350 degrees, about 45 minutes.
Add a vegetable for a one-pot meal!
